I probably don't need to sell you on the idea of eating quinoa. Although it's technically a seed, quinoa has quickly become the trendiest way to fill your whole grain quota, and quinoa bowls are taking over lunch menus (and Pinterest boards) everywhere. Something you may not have come around to yet, though, is eating quinoa for breakfast. Let me just start by saying: Quinoa for breakfast is an excellent idea.
It's no secret that I love classic oatmeal more than pretty much any other food out there, but even I can appreciate the appeal of a quirky, quinoa-based breakfast every once in a while. See, when I cook whole grains, I cook them in big batches to use in recipes throughout the week. If you dress quinoa with lemon juice, shallots and olive oil, and perhaps with some chopped herbs, you’re set. To tame the bite of lemon juice, add a little honey or cut it with fresh orange juice. Or, if you’re taking your salad in a Latin or Asian direction, use lime juice instead of lemon.
For a deeply savory, Asian-inspired dressing, whisk soy sauce with rice vinegar, grated ginger and scallion. Whisk in a little sesame oil, if desired.
The adobo sauce from canned chipotles is the perfect easy add-in for a quinoa salad that has Mexican or Southwestern ingredients, like corn and black beans. Add some honey or brown sugar to mellow the heat.
For a North African-inspired salad, whisk spices like cumin, ginger, coriander, cinnamon and turmeric into the dressing. For a little heat, add a pinch of cayenne pepper.
For a richer quinoa salad made with lots of sturdy vegetables, you can use pesto as the dressing. It works best if it’s a saucy rather than pasty pesto.

I cook the quinoa in almond milk sweetened with just a touch of brown sugar (you can use any sweetener or omit if you wish) and serve it with extra warmed milk on the side. That’s just my preference, if you prefer your cereal thicker you can add less milk. Using almond milk makes this a great dairy-free, gluten-free breakfast option for people with allergies.
