Quick apricot-coconut ice cream dessert

Wash and peel the apricots.

Cut them into small pieces and put them in the freezer for at least 3 hours or overnight.

Cool the coconut milk as well.

When the apricots are well frozen, put all the ingredients in a mixer (keep 1 tablespoon of grated coconut for the final decoration).

Start mixing, first lightly, give a few short pulses, then mix continuously until you get a cream - 5 minutes maximum.

Serve immediately in jars, sprinkle grated coconut on top.
