Overturned cake with cherries

We wash the cherries and remove the seeds. We place them in a tray lined with baking paper.

Mix the egg whites with a pinch of salt until they double in volume, add the yolks and mix well after each one. Add oil and water, flour mixed with baking powder and lemon peel.

Stir with a spoon until smooth.

Pour the composition over the cherries and put in the preheated oven until it passes the toothpick test.

When it is ready, leave it for 5 minutes and then turn it over on a plate and let it cool very well.

Mix the whipped cream well and at the end, add the vanilla essence to taste. We decorate the cake according to preference.


1. Preheat the oven to 180 degrees. Grease and line a 22 cm cake pan or individual cake tins with flour.

2. Peel and slice the pineapple, or use slices of compote if it is more convenient for you. Heat a pan, melt 50g of butter and add muscovado sugar (you can also use plain brown sugar instead). 5. Combine the two compositions until smooth, pour the composition into a cake and bake for 25-30 minutes.


How to prepare overturned cake with cherries

The preparation is very simple. Put the cherries in the pan, sprinkled with raw sugar (or white sugar, but the raw one tastes better) and a few strips of butter. Pour the countertop over them. When the cake is baked, peel off the edges, passing it around with the blade of a knife, place a tray of the right size on the tray and turn the cake over in a short, determined motion. The cake looks very inviting even so, unadorned. Depending on your tastes or the guests you have at the table, you can take it to another level by adding either a globe of vanilla ice cream or a few slices of cream.


Overturned cake with clementines - recipe

ingredients

  • 10 clementines
  • 4 eggs
  • 150 ml of sweet milk
  • 100 g butter (or oil)
  • 18 g of sugar
  • 300 g of flour
  • 1 sachet of baking powder

Method of preparation

Break the eggs into a large bowl. You do not have to separate the egg whites from the yolks.

Add the sugar and add the mixer. Mix the ingredients on high speed for about 10 minutes. The eggs should increase in volume and result in a light foam.

Then pour the milk and mix several times at low speed, just for smoothing.

Then add the butter, which you have previously melted and which has cooled. Mix again with the mixer until it is completely incorporated.

Mix the flour with the baking powder and sift it over the bowl. Mix with the mixer until you get a homogeneous composition.

Now that you have the finished cake composition, you can take care of the fruit.

Peel a squash, grate it and squeeze the juice. Then cut them in half horizontally.

Clementines usually have many seeds. It is advisable to take them out first, so as not to create an unpleasant texture and taste in the final cake.

Take a 25 cm tray. and line it with baking paper. Sprinkle 2 tablespoons of sugar on the bottom and then place the clementines, with the cut side down.

Another option would be to use clementine slices, which you place in a circular fashion, which will give a flowery look at the end. As well, the fruit can be cut into smaller pieces and arranged as desired.

After covering the bottom of the tray with clementines, pour the top. Beat the table tray to release the air bubbles and the composition to sit well.

Preheat the oven to 160 degrees Celsius. Put the tray in the oven and let the clementine cake bake for 45 minutes.

It is advisable to check with a toothpick before removing any top from the oven with a toothpick.

Remove the pan from the oven and turn the cake over on a round platter. The clementines must now be on the surface. Slightly peel off the paper and allow the cake to cool completely.

This cake can be baked in other types of trays: square, rectangular or even in cake trays. It depends on the desired final look.

You can also replace citrus fruits with other fruits, such as nectarines, apples, plums, etc.


Strawberry and Cherry Cake

The pitted cherries are mixed with a tablespoon of sugar.

The strawberries are washed and their tails removed, then cut into halves or quarters.

Separate the egg whites from the yolks.

Whisk the egg whites with a pinch of salt, then mix with the sugar until they become like a meringue. Add the yolks, oil and vanilla essence and mix well. Put the flour (gradually) and the baking powder and mix the dough from the bottom up, lightly, with a silicone spatula. Add the fruit and incorporate into the dough. Pour the composition into a pan greased with oil and lined with baking paper and place in the oven until nicely browned. Remove the countertop from the oven and allow to cool.

Caramelize the sugar, chewing continuously, then add water and let it boil until all the caramel melts. After that, let it cool.

Break the chocolate into pieces, place in a saucepan, then add the whipped cream. Put the pan on the fire and mix the ingredients until all the chocolate has melted. Transfer the composition to a plastic bowl, allow to reach room temperature, then place in the freezer for 15-20 minutes. After this time, take the bowl out of the freezer and mix the composition, adding the rest of the cold cream.

The strawberries are washed and the tails are removed, then they are boiled together with the sugar until they start to stick to the bowl. Allow to cool, then grind in a food processor.

Put a saucepan of water on the fire.

Hydrate the gelatin with cold water in a bowl, and after it solidifies, put the bowl in hot water until it dissolves. The gelatin is then mixed with the strawberry jelly.

Pour the cold syrup over the cold counter. Add the cream with white chocolate, then put cherries (washed and pitted) on the edge of the cake. Cut a few strawberries into small pieces and place over the rest of the cream, then add the strawberry jelly. In the middle a flower is formed from halves of strawberries, then 6 more cherries are added with the tail around the flower.


  • 500 g of cherries

  • 100 g butter

Mix the butter left at room temperature with the sugar, add a pinch of salt and add the eggs. Continue with the milk, vanilla essence and then add the flour mixed with the baking powder.

We put the composition in a tray (22 x 30) greased with butter and lined with flour, leveling and placing on top the cherries powdered with flour which, after being cleaned of tails and seeds, remained 400 g.

Bake for about 25-30 minutes in the preheated oven at 180 ° C, for safety do the toothpick test.

When it is ready, let it cool and cut it into cubes or rectangles on which we sprinkle powdered sugar. Good job and good appetite!
